A distinguished alumnus of IHM Chennai, Chef Dora has worked with some of the most prestigious hospitality establishments, including Jumeirah Emirates Towers, Crowne Plaza Dubai, Grand Hyatt Muscat, Hyatt Regency Delhi, and Al Raha Beach Hotel Abu Dhabi.
Specializing in Indian cuisine, his culinary repertoire also spans Cajun & Creole, Levantine, Middle Eastern, and Mediterranean culinary traditions. During his recent tenure as Executive Chef at Hyatt Hyderabad, Swapnil Dora successfully launched two notable F&B outlets: Mrs Mage, a culinary venture, and a chic modern bar. These establishments quickly gained popularity, significantly increasing non-resident foot traffic. Additionally, he has demonstrated exceptional skill in managing large-scale culinary operations, having orchestrated outdoor catering events for up to 10,000 guests.
His commitment to food hygiene is exemplary. At Hyatt Hyderabad, he was instrumental in the hotel achieving ISO 22000:2018 certification and Eat Right Campus certification, underscoring a dedication to the highest food safety standards.
Chef Dora’s achievements include awards at the prestigious Salon Culinaire, the largest culinary competition in the Middle East. He has also mentored team members who have won accolades in the same competition, showcasing his leadership and commitment to culinary excellence.
